Baked Brie with Peach and Raspberry Topping

A dear friend came over for a visit today and brought a luscious wee circle of Brie with her. This of course called for the use of my darling little Brie Baker, made by Wildly Delicious (stainless steel version shown above):

Any kind of cheese  in my opinion is delightful (with the notable exception of course, of Kraft Singles, which with their plastic consistency would be better suited to be melted and formed into tarps for trucks – just saying) but on a cold winter day, nothing quite beats warm delicious baked brie.

Here’s How We Made It:

Directions below are for using about a 3 inch diameter or 100 g disc of brie  – here is the one we used: http://www.castellocheese.com/en-ca/our-cheeses/castello-brie

Preheat oven to 350 degrees F

Take your brie out of the package, and prepare by slicing a very thin top layer off of brie, leaving sides and bottom covered with the skin

Place sliced side up in brie baker

Topping:

  • About 5 large slices of canned peaches (fresh would be better!) or enough to cover the top thickly
  • Fresh Raspberries to taste, mashed up (we could have pureed together with peaches but thought the pop of red color on the peaches would look pretty!)
  • Sprinkle of cinnamon (to your own taste – we used about 1/2 tsp)
  • Crushed toasted pecans

Puree the peaches slightly in a Magic Bullet or small hand blender

Spoon the peach puree onto the top of the brie

Add the brown sugar

Spoon mashed raspberries on, adding cinnamon

Lastly, sprinkle on your roasted pecans

Place a baking sheet underneath the baker, and place in heated oven

Bake for 15 mins covered with the brie baker lid, then remove cover and bake for an additional 5-6 mins or until bubbling on top, and cheese is gooey when you test with a knife. Enjoy while warm.

Be transported to Cheesy Gooey Fruity Heaven. You are welcome.

This one can be enjoyed entirely by itself, or with crackers and a nice glass of chilled white wine (or whatever tickles your fancy!)

    This looks and sounds delish!!! I haven’t eaten a lot of brie, but I’ve done manchego cheese in an egg wash, and then rolled in panko and crushed pecans and baked – sinful!!! I am also going to be bad here, and say I love processed cheese on a BBQ hamburger, I can’t help myself lol Great food post 🙂

      Ohhhh..Manchego in egg wash, panko and crushed pecans…seriously I am having Cheese envy now LOL! Someone needs to start a Cheese site…just for cheese yum! Coming from one of my FAVE Food Porn photographers, I value your commentary! 🙂
